  1. Peel cucumber and cut in half. Remove seeds with spoon. Coarsely chop cucumber. Combine with remaining ingredients except pitas and lettuce in medium-size bowl. Cover and chill for 2-3 hours before serving
  2. When ready to serve, heat pitas in toaster oven until warm and pliable. Cut in half and line with lettuce; fill with cucumber mixture. Serve immediately


Any sandwich spread made with mayonnaise, yogurt, or sour cream, can be stored, covered in the refrigerator up to 4 days. Make a couple of these spreads and keep them on hand so your family can make sandwiches or use them as a dip whenever they get hungry.
